Manitoba has 28 provincially registered abattoirs that process small numbers of livestock, and two provincial abattoirs processing poultry. In 1999, 26 provincial abattoirs slaughtered over 12,000 cattle and 135,000 hogs as well as sheep/lambs, ostriches, emu, goats, bison and wild boar.

The largest processing facilities in the province are devoted to hogs. Currently, 80,000 hogs are slaughtered weekly. About 45,000 of these hogs are processed at the Maple Leaf plant near Brandon, which is designed to expand to a two-shift capacity of 90,000 hogs per week.

J.M. Schneider recently announced plans to increase processing capacity at their Winnipeg plant to 90,000 hogs per week. These processors, combined with the other smaller plants in Manitoba, will have the capability to process 10 million hogs per year when running at full capacity.
